When strolling around in a local shop at my home town yesterday, some fancy looking berry mix caught my attention.
It was a mix with goji berries, craisins and green raisins (Why green?? God knows!) mixed with some almonds and sunflower seeds.
I have to say I was really surprised to find this in my home town (since I’m already having a tough time finding an avocado here), so I just couldn’t walk past them without buying them and use them in today’s creation for Breakfast Bake October!
This also implies some sad news for the sweet tooth readers: the original plan was to make a frangipane inspired bake today, but I couldn’t help myself and had to try that mix asap!
No need to be too sad though, the frangipane bake will be featured next week and to give this bake a little something sweet (and to already prepare you guys for the frangipane theme) some marzipan was added on top of these bakes.
Unfortunately the marzipan pieces were a little… er… too coloured when they came out of the oven (and no, they didn’t burn, they taste fine, it just looks a bit unappetising, sorry for that!)
‘Vitality Breakfast Bake’
- 6 T of oats
- 3 T of whole wheat flour
- 1/2 t baking powder
- 4 T of milk
- half a banana, mashed
- cinnamon
- 3 T of vitality mix ( you can also make your own dried fruits/berries and nuts/seeds mix for this)
- optional: a slice of marzipan, chopped into cubes
Mash the banana, add the oats, flour and milk and mix till combined well.
Add the vitality mix and a few sprinkles of cinnamon and fold it under the mixture. Pour the mixture into some greased ramekins, place them in the oven for about 20 minutes.
This is probably the most cake-like creation in these Breakfast Bake Series, it’s more like a muffin.
Njam, cake for breakfast, what’s not to like?!
