Lunch today was a bit of a mish mash. I still had mushrooms lying around so decided to do something with them, the mangetouts were the center piece of course 😉 . And I also made one of my favourite quick rice dishes: oriental inspired rice.
- 60 gr of brown rice
- 2 handfuls of peas
- 2 handfuls of raisins
- tons of cinnamon
- 12 almonds, chopped
Cook the rice according to the directions. Add the peas, raisins and almonds. Sprinkle with loads of cinnamon.
You can eat this warm or cold. Simple as that and really yummy!
