Oriental Rice

 

Lunch today was a bit of a mish mash. I still had mushrooms lying around so decided to do something with them, the mangetouts were the center piece of course 😉 . And I also made one of my favourite quick rice dishes: oriental inspired rice.

‘Oriental Rice’

  • 60 gr of brown rice
  • 2 handfuls of peas
  • 2 handfuls of raisins
  • tons of cinnamon
  • 12 almonds, chopped

Cook the rice according to the directions. Add the peas, raisins and almonds. Sprinkle with loads of cinnamon.

You can eat this warm or cold. Simple as that and really yummy!
Here’s what lunch looked like when everything was assembled on one plate:

Oriental rice, mangetouts ( blanched first and then heated in a skillet in some olive oil) and mushrooms stuffed with zucchini and tomato

    Great minds think alike!! I have been eating this for the last couple of days, with only two minor changes – no peas, but split-peas and no cinnamon, because I run out of it 😀 However as I think of it, that cinnamon would probably make a major difference! 😀
