Breakfast Bake October Continues

 

Breakfast Bake October proudly presents its newest addition to the family : the Harvest Bake

This was what came out of my oven after a lovely 6K run this morning, such a great way to start your day, even if it’s a rainy one.

‘Harvest Breakfast Bake’

  • 4 T of oats
  • 3 T of whole wheat flour
  • 1/2 t of baking powder
  • half a banana, mashed (or 40 gr of apple sauce)
  • 1/4 of an apple, chopped
  • 5 walnuts, chopped
  • half a cup of pumpkin
  • 1 a 2 t of brown sugar (for the caramelized topping)
  • cinnamon and salt
  • optional: a handful of dried fruits
Preheat oven to 200° C (390F).
Mash the banana and add the flour, oats and baking powder. Stir till combined.
Then fold the apple chunks, walnuts and about 3/4 of the pumpkin (and dried fruits of you’re using it) under this mixture. Pour everything into some greased ramekins or an oven-proof bowl, top the mixture off with the rest of the pumpkin and the brown sugar to get a caramelized pumpkin crust.
Bake for about 23 minutes.
Wow, that crust really was divine ! And it had such a fancy colour 🙂
