Leftover brown rice is one of the true joys in life.
Okay, maybe that’s a tiny bit exaggerated but it is still pretty amazing stuff.
But before we’re going to talk leftovers, we’ll first take a look at what happened to the rice before it was transformed into a lovely breakfast bowl.

Brown rice with mushrooms, tomato, a cup of chickpeas, a cup of red beans, half a zucchini and 2 tablespoons of tomato paste with grilled zucchini on the side
Make sure you cook enough rice from now on cause you’re about to discover rice for breakfast!

A beautiful bowl of leftovers!
And beautiful add ins: cinnamon (tons of it), a couple of walnuts, sunflower seeds and half an apple (chopped)
Put everything in a bowl with a lid, add some soy milk and put it in the fridge overnight so the rice can absorb all the flavours
In the morning you can just eat this as it come out of the fridge (lovely on hot days) or you can add some more soy milk (and more cinnamon, there’s no such thing as too much cinnamon) and put it in the microwave for a couple of minutes.
